Emirates Flight Catering: Operation Behind 300,000 Meals to be Served at Dubai Airshow 2025

When the Dubai Airshow opens its doors on November 17, 2025, the spotlight won’t only be on the aircraft and multi-million dollar deals. Behind the scenes, Emirates Flight Catering (EKFC) will deploy an unprecedented logistical and culinary operation: serving more than 300,000 meals to delegations from 98 countries, including aviation executives, ministers, military representatives, and international visitors.

Two Central Kitchens Built from Scratch

To achieve this feat, EKFC has built two complete central kitchens in just two weeks. These facilities are strategically located between the exhibition building and the chalets, and are equipped with refrigerated chambers, washing areas, storage zones, independent power supply, and specialized spaces for pastry, cold kitchen, and central production.

Additionally, infrastructure for staff has been set up, such as dining halls, registration centers, wellness shops, rest areas, and uniform distribution centers. Everything has been designed to guarantee operational efficiency and consistent quality during the event.

A Team of 2,600 People and International Talent

These interns, including Emirati nationals, have received six months of training in hospitality, finance, human resources, and event operations, with an emphasis on cultural sensitivity.

Authentic Cuisine, Adapted to Each Pavilion

EKFC has designed a culinary offering that reflects the diversity of the attendees. Each pavilion will feature customized menus, prepared by chefs specialized in regional cuisines. Notable dishes include:

Infrastructure and Logistics Serving Excellence

The proximity between the Airshow site kitchens and the EKFC facility at Dubai World Central (with a capacity for 150,000 daily meals) allows for smooth logistics. Security scanners and access to restricted areas have been implemented to ensure safe and efficient operations.

One week before the event, a full rehearsal is conducted to validate all processes and ensure flawless execution.

Commitment to Sustainability

EKFC has eliminated plastic bottles throughout the venue, replacing them with glass containers and recycling systems. Food surplus will be composted or donated to food banks through the Dubai Municipality. Additionally, local sourcing is prioritized, with suppliers such as Dibba Oysters and Mai Dubai.
