With vegetarian dishes, meat, poultry and fish, the chefs have created refined dishes for the airline&#8217;s customers to enjoy over the coming months on departure from Paris.<\/p>\n\n\n\n<p><strong><em>\u2192 <\/em><\/strong><a href=\"https:\/en\/2021\/09\/air-france-takes-delivery-its-first-airbus-a220.html\"><em>Air France takes delivery its first Airbus A220.<\/em><\/a><\/p>\n\n\n\n<p>With these exceptional new dishes, Air France continues to promote French fine dining throughout the world.<\/p>\n\n\n\n<p><strong>3-star gastronomy in the La Premi\u00e8re cabin<\/strong><\/p>\n\n\n\n<p>In the airline&#8217;s exclusive La Premi\u00e8re cabin, three Michelin-starred chef R\u00e9gis Marcon has come up with six new tasty dishes. Accompanied by the expertise of the Servair Culinary Studio, of which he is president, R\u00e9gis Marcon revisits the seasonal products that are close to his heart:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Vegetable lasagna, with tangy chive cream;<\/li><li>Braised veal shank, sage sauce, potato gratin with porcini mushrooms;<\/li><li>Beef tenderloin in red wine, saut\u00e9ed potato and morel cake;<\/li><li>Pike and shrimp cake with lobster sauce, saut\u00e9ed girolle mushrooms with tarragon, spinach;<\/li><li>Mixed scallops and scampi with truffles, reduced jus and julienne vegetables;<\/li><li>Confit pigeon, apricot sauce, lemon bulgur, mushrooms and butternut.<\/li><\/ul>\n\n\n\n<p><em><strong>\u2192<\/strong> <a href=\"https:\/en\/2021\/08\/air-france-new-lounge-paris-airport.html\">Air France inaugurates new lounge at Charles de Gaulle airport.<\/a><\/em><\/p>\n\n\n\n<p><strong>Fine dining in the Business cabin<\/strong><\/p>\n\n\n\n<p>In the Business cabin, Air France has, for the first time, entrusted its menu to two Michelin-starred chef Mathieu Viannay, with 8 original dishes combining delicate flavours and local produce to be enjoyed on board:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Penne pasta, arugula and spinach gratin, ricotta cream with lovage;<\/li><li>Risotto verde, vegetable Bolognese;<\/li><li>Beef tenderloin, macaire potato patties, roasted beet and smoked meat juices;<\/li><li>Poultry fillet with morel mushrooms, spelt and butternut squash risotto;<\/li><li>Poached cod fillet with baby vegetables and taggiasca olives;<\/li><li>Pike perch fillet, armorican sauce, yellow carrots and herb semolina;<\/li><li>Braised veal shank with sweet spices, split pea puree, mange
