Since September, Manuel Mendoza\u2014a Barranquilla-based chef behind restaurants Manuel Cocina and Cocina 33, recognized by Latin America\u2019s 50 Best Restaurants\u2014has joined the project led by \u00c1lvaro Clavijo, chef of the Bogot\u00e1-based restaurant El Chato, which appears on the list of The World\u2019s 50 Best Restaurants.<\/p>\n\n\n\n<p>\u201cThe Insignia by Avianca menu continues to evolve, and it is a great honor to welcome Manuel Mendoza to elevate the flavors of Colombia as part of this premium experience,\u201d commented Clavijo.
