United Airlines has announced a strategic partnership with Chef’s Table—the brand behind the award-winning Netflix series—to introduce 10 exclusive new culinary experiences to its international business class menu, United Polaris. This collaboration brings together 11 internationally prestigious chefs from four continents to transform inflight service into a restaurant-quality experience at 35,000 feet.

A High-Level Alliance: From Streaming to the Skies

Starting August 1, passengers traveling in United Polaris international business class will be able to enjoy recipes crafted by the culinary talent of Chef’s Table. The airline has selected chefs representing United’s seven U.S. hubs, as well as key international gateways including London, Tokyo, and São Paulo.

Andrew Nocella, Chief Commercial Officer at United Airlines, noted that the carrier’s network spans many of the world’s culinary capitals, allowing for an authentic connection between globally acclaimed chefs. According to Nocella, this collaboration leverages United’s position as the world’s largest airline to deliver unparalleled gastronomic moments in the air.

Regionalized Gastronomic Concept

Each participating chef has designed a complete dining experience that includes an appetizer, salad, and main course. These creations are inspired by the chefs’ home cities and will be served specifically on flights departing from those locations.

Justin Connor, President of Chef’s Table Projects, described the collaboration as an unprecedented move to elevate inflight dining, making a global culinary journey a reality for millions of passengers.

11 Chefs and Their Culinary Hubs

The roster of talent includes figures recognized with Michelin stars and James Beard Awards:

  • Los Angeles (LAX): Nancy Silverton (Osteria Mozza), a culinary icon and co-owner of a Michelin-starred restaurant specializing in Italian cuisine.
  • New York/Newark (EWR): Fariyal Abdullahi (Hav & Mar), whose cooking fuses her Ethiopian roots with European techniques.
  • Chicago (ORD): Jenner Tomaska (Esmé), a three-time James Beard nominee who blends classic French techniques with art.
  • San Francisco (SFO): David Barzelay (Lazy Bear), a visionary of American fine dining with two Michelin stars.
  • Houston (IAH): Justin Yu (Theodore Rex), a James Beard Award winner specializing in cuisine with French influences.
  • Denver (DEN): Penelope Wong (Yuan Wonton), who brings flavors from her Asian-American childhood to the local scene.
  • Washington, D.C. (IAD): Isabel Coss and Matt Conroy (Lutèce), who combine French technique with Mexican sensibility at their Michelin-starred restaurant.
  • São Paulo (GRU): Manu Buffara (Manu), focused on elevating Brazilian flavors through sustainable agriculture.
  • London (LHR): Tomos Parry (Mountain & Brat), whose Michelin-starred restaurants combine Welsh traditions with techniques from Northern Spain.
  • Tokyo (NRT): Tashi Gyamtso (Jimgu), recognized for a gastronomic approach based strictly on what the land provides.

This initiative aims to enhance the food offering and solidify United Polaris’s reputation as a benchmark in the premium transcontinental segment.
