Avianca continues to elevate the gastronomic experience of its Business Class by incorporating renowned chefs. Starting in March, Jennifer Rodríguez, owner of the restaurant Mestizo Cocina de Origen, located in Mesitas del Colegio (Cundinamarca, Colombia), will be the guest chef for the Insignia by Avianca dining experience. Her culinary offerings will be featured on flights from Bogotá to London, Paris, Madrid, and Barcelona, in collaboration with Álvaro Clavijo, chef of El Chato, who holds the 25th position in The World’s 50 Best Restaurants ranking.

Cuisine with Colombian identity at 36,000 feet

Jennifer Rodríguez is known for her work with local ingredients, mostly sourced from the surroundings of Mestizo Cocina de Origen, a restaurant located approximately 60 kilometers from Bogotá. Her innovation in the culinary world led her to be recognized in 2021 by 50 Next, a list by The World’s 50 Best that highlights emerging talents in global gastronomy.

For Rodríguez, this collaboration with Avianca represents an opportunity to showcase the culinary legacy of Colombia’s rural areas to a global audience. “This is a great opportunity to share my experience in the kitchen and the work that has been done at Mestizo Cocina de Origen, to put the culinary legacy of Colombia’s rural areas on the map,” expressed the chef about her participation in Insignia by Avianca.

Expansion of Insignia by Avianca’s Gastronomic Offerings

The airline has also expanded the availability of Álvaro Clavijo’s menu on flights from Madrid and Barcelona to Bogotá, Medellín, and Cali. This decision aims to strengthen the company’s high-end culinary offerings, highlighting ingredients and traditions from both sides of the Atlantic. “Expanding the availability of the menu created by Álvaro Clavijo on routes from Spain to Colombia allows us to give greater visibility to this high-end gastronomic proposal, with a signature cuisine that highlights the traditions and ingredients from both sides of the Atlantic,” said Katherine Stradaioli, Vice President of Customer Delivery at Avianca.

Insignia by Avianca is not only distinguished by its gastronomic offerings but also by a complete premium experience.
